New Knives

Im so excited to get new knives!
Shrimp Saute w/Cauliflower Mash and fried Leek!
Im on a seafood kick it looks like. Tonight I made a simple shrimp saute.
I started the pan with 4 strips of bacon diced and added minced garlic. After the bacon began to reduce, I added the shrimp and cooked till they were nice and plump. I then deglazed the pan with some white wine and made a simple sauce of the bacon drippings, shrimp remains and garlic. I seasoned the shrimp with thyme and old bay. On top of the shrimp I added some fried leek rings. The shrimp and the leeks all sat upon a cauliflower mash. The process of making the mash was just to boil the cauliflower and then blend it into a smooth mixture that resembled mashed potatoes. I added salt and pepper and turmeric.
Oyster Stew!
I decided to make oyster stew for dinner tonight. I love oysters so much. One of my favorite summer memories is of my family going to the Indian Pass Raw Bar in the Bay area, and eating raw and baked oysters till we couldn’t anymore.
Oyster stew is a very simple dish to make, along with most soups. I started out with a classic mirepoix of equal parts diced carrots, celery and onion. I let that simmer till the onions were translucent and soft, then added 2 potatoes diced and let them soften. I then added a mixture of equal parts white wine and the oyster Liquor(the remaining juice). After the wine had cooked out a little bit, I added a quart of heavy cream, and the whole oysters. After letting that simmer for 30 minutes letting it thicken, it was ready to cool and serve!
I don’t know why, but I feel at home when I am in Chattanooga,TN. I think I will end up there some day. Its a beautiful growing city with a small town feel. I have a lot of friends who are from there and I think that may have something to do with why I like it so much.
